Ingredients:
- 4 cups cooked rice
- 1 brick extra firm tofu baked or airfried
- 1 tbsp cooking oil
- 1 medium size onion sliced
- 4 cloves garlic minced
- 1/2 cup mushroom sliced
- 1/2 cup red bell pepper sliced
- 1/2 cup yellow or green bell pepper sliced
- 1/2 cup sliced carrots
- 1/4 cup baby corns
- 1/2 cup spring onions
- 1/2 tbsp ginger grated
- 1 tbsp chili garlic sauce
- 1 tbsp soy sauce
- 1/2 tbsp brown sugar
- 1/2 cup packed thai basil leaves
- salt as per taste
Method:
- Take a wok for cooking. Heat oil in the wok, keep heat on medium. Add ginger, garlic and saute for a minute.
- Add sliced onions, red and yellow bell peppers, mushrooms, baby corns, carrots and saute well for 4 minutes.
- Add baked or fried tofu to the wok.
- Add soy sauce, brown sugar and chili sauce in a separate bowl. Mix well and add it to the wok. Mix well.
- Finally add cooked rice and mix well but be gentle. Saute for 4-5 minutes.
- Garnish with chopped spring onions and fresh basil leaves.
- Enjoy warm!
